About us

The MORI story

森 is read “mori” and means forest in Japanese. We chose the name because everything we serve grows out of the ground — not out of a factory.

Philosophy

Eat healthy, live healthy

MORI started from one conviction: good food begins with good ingredients. Not with a clever recipe or a covering sauce, but with what actually goes into the pan.

So we cook the dishes Indonesia already knows — nasi goreng, lontong sayur, bihun, risol — and lift every ingredient in them. Our rice is organic. The oil is rice bran oil. The stock is mushroom and vegetable, not seasoning powder. The salt is Himalayan, the sweetness comes from coconut sugar and molasses.

Ingredients like these are not cheap, and we will not pretend otherwise. What we promise is that every rupiah goes into what is on the plate — not into flavour enhancers, preservatives or fillers.

And we are open about it. Every dish lists its full ingredients and nutrition figures, so you can judge for yourself what you are paying for.

What the seal means

Three trees, one forest

The character 森 is built from three 木 (tree) characters. One tree stands alone; three trees become a forest. That is how we see MORI — a café, a bakery and a grocery standing together, with a community of customers growing around them.

Chosen ingredients

We upgrade every single ingredient

The flavours you already know, built from better ingredients. No shortcuts — and that is exactly where the difference is.

Kitchen standards

Four things we never compromise on

No MSG

Savouriness comes from mushroom stock, vegetable stock and fresh aromatics in the pan — never from seasoning powder.

No preservatives

We cook in small batches every day rather than storing food for weeks.

Dairy free

Our creams and milks come from coconut and nuts, never from cows.

Gluten free

Our cakes and bread use rice, quinoa, oat and almond flour — never wheat.
